Ingredients:

  • 1 quart organic whole milk or half-and-half
  • 1 scoop Sugar Shift Starter Culture or 2-4 capsules of Sugar Shift® (simply open 2-4 capsules into a bowl, it doesn’t need to be precise)
  • Yogurt maker or Instant Pot with temperature control (we recommend Luvele )
  • Glass jar or container with lid
  • Thermometer (optional)

Step-by-Step

1. Prepare the Milk

  • Pour milk into a clean pot or yogurt container.
  • Optional: Heat to 180°F (82°C) for a thicker yogurt, then cool to 98–100°F.
  • Pasteurized milk can skip heating—just bring to room temperature.

2. Add the Culture

  • Stir in Sugar Shift Starter Culture or capsules.
  • Use a non-metal utensil and mix gently.

3. Ferment (Low & Slow)

  • Maintain 98–100°F.
  • Ferment for 24–36 hours.
  • Stop before whey separates—the longer it ferments, the tangier it becomes.

4. Chill & Set

  • Refrigerate for 3–4 hours.
  • Yogurt will continue to thicken as it cools.
  • Store up to 10 days in the fridge.

5. Reuse (Once Only)

  • Use 2 tablespoons of finished yogurt to start one new batch.
  • Do not reuse beyond one generation.

You can also make a non-dairy version using coconut milk:

  • 1 T gelatin (you need to dissolve it first)
  • 1-2 T Honey
  • 2 cans of coconut milk (I used Organic Thai Coconut milk)
