A simple yet flavorful side dish, this roasted winter squash is caramelized and seasoned with earthy herbs.
Ingredients:
- 1 medium winter squash (such as butternut or acorn), peeled, seeded, and cubed
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried thyme or rosemary
- 1/2 tsp ground cinnamon (optional, for a touch of warmth)
- Fresh parsley or sage for garnish
Instructions:
- Preheat oven to 400°F. Toss squash cubes with olive oil, salt, pepper, thyme, and cinnamon.
