Roasted Winter Squash with Herbs 

A simple yet flavorful side dish, this roasted winter squash is caramelized and seasoned with earthy herbs.

 


Ingredients:

  • 1 medium winter squash (such as butternut or acorn), peeled, seeded, and cubed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried thyme or rosemary
  • 1/2 tsp ground cinnamon (optional, for a touch of warmth)
  • Fresh parsley or sage for garnish

Instructions:

  1. Preheat oven to 400°F. Toss squash cubes with olive oil, salt, pepper, thyme, and cinnamon.
  2. Spread squash in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway, until tender and golden.
  3. Garnish with fresh parsley or sage before serving.
