French Cassoulet with Beans and Sausage 

Cassoulet is a classic French dish that brings together beans, sausage, and slow-cooked meat for a comforting and savory meal.





Ingredients: 

  • 1 lb dried white beans (Great Northern or Cannellini), soaked overnight and drained
  • 4 strips of bacon, chopped
  • 1 lb pork sausage, sliced
  • 1 lb bone-in chicken thighs
  • Salt and pepper to taste
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 tbsp tomato paste
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Fresh parsley for garnish

Instructions:

  1. In a large Dutch oven, cook bacon over medium heat until crispy. Remove and set aside.
  2. Season the sausage and chicken with salt and pepper. In the same pot, brown the sausage and chicken, then remove and set aside.
  3. Add the onion and garlic to the pot, cooking until softened.
  4. Add beans, broth, tomatoes, tomato paste, bay leaf, thyme, and rosemary. Bring to a simmer.
  5. Return the bacon, sausage, and chicken to the pot. Cover and bake at 300°F for 2-3 hours, until the beans are tender.
  6. Garnish with parsley and serve hot with a side of greens.
