French Cassoulet with Beans and Sausage
Cassoulet is a classic French dish that brings together beans, sausage, and slow-cooked meat for a comforting and savory meal.
Ingredients:
- 1 lb dried white beans (Great Northern or Cannellini), soaked overnight and drained
- 4 strips of bacon, chopped
- 1 lb pork sausage, sliced
- 1 lb bone-in chicken thighs
- Salt and pepper to taste
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 cup diced tomatoes
- 1 tbsp tomato paste
- 1 bay leaf
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Fresh parsley for garnish
Instructions:
- In a large Dutch oven, cook bacon over medium heat until crispy. Remove and set aside.
- Season the sausage and chicken with salt and pepper. In the same pot, brown the sausage and chicken, then remove and set aside.
- Add the onion and garlic to the pot, cooking until softened.
- Add beans, broth, tomatoes, tomato paste, bay leaf, thyme, and rosemary. Bring to a simmer.
- Return the bacon, sausage, and chicken to the pot. Cover and bake at 300°F for 2-3 hours, until the beans are tender.
- Garnish with parsley and serve hot with a side of greens.
